Instructions
1. | Dice the garlic chives. Beat the eggs with salt then mix them with the garlic chives. |
2. | Add 3 tbs. of oil and egg mixture to a heated non-stick pan. Shake the pan to make the egg mixture spread evenly and cook the eggs over medium heat. While cooking the eggs, use a pair of chopsticks to consistently stir the eggs from edges to the center to make the eggs fluffy. |
3. | Once the eggs are 70% done, turn off the heat. Use the remaining temperature of the pan to cook the eggs through. |

2. | 不沾鍋用中火燒熱後加入3大匙油。倒進蛋液在鍋裡攤平,用筷子不停從外向中間攪動,讓蛋蓬鬆。 |
3. | 等到蛋約7成熟時熄火,用鍋子餘溫將蛋炒熟。 |
